Lentil Burger and Bun Recipes

no mandolin. just careful cutting and a few thick chips.

burger recipe:

3 cups cooked lentils
4 eggs
1/2 t salt
--blend above in blender or processor

-stir in:
1 onion, finely chopped
1 c bread crumbs

cook in olive oil in covered pan, 7-10 min/side

Buns:

1 c milk
2 T melted butter
1 large egg

-whisk together above ingred.
-put in bread machine.
add:
3 1/4 c flour
3 T sugar
1 t salt
1 scant T yeast

dough cycle.

roll to 1/4 inch thick. cut with a circle shape.

15 min 350 degrees on slightly greased pan


Rachel--what do you use in pancakes or other pan-fried things to make them cook (i.e. what do you use instead of eggs)? for the burgers, i wonder if a combination of applesauce or some kind of pureed vegetable or potato would work, along with some oil or something?

the other idea i had was, do you use bread made from rice flour? you could take a couple slices of those and process them into crumbs. i've seen raw food diet recipes for veggie burgers. they did a lot of dehydrating, but i'm sure they didn't use eggs or breadcrumbs.

    Rice bread is tricky because it's usually fruit juice sweetened, so the bread crumbs from that might make it weird.....and i do have an egg substitute/stabilizer, but usually use it only in baked goods. I will probably just make a different thing for leah on this night. An idea: do you think you could make a bunch of these and then wrap them in plastic wrap really well and freeze them? That would be awesome!

  2. We've done the frozen lentil patties thing. It works really well if you freeze them on a cookie sheet first and then when they're frozen you can just put them in a freezer bag. In fact right now we have frozen turkey burger patties in the freezer.
